Bird Nest Cookies

Easter is coming up! A week from this Sunday, can you believe it? I love this time of year. It starts getting nice and warm out. Everything’s in bloom and full of color. There’s little baby animals everywhere! What’s not to love??? I thought these cookies would be perfect for a Spring or Easter brunch. Just look at those little chocolate eggs and imagine little chocolate chicks popping out! Adorbs! Here’s a tutorial on how to do them:

What you need:
-One recipe of Roll-out dough, find the version I like here
-A 3 inch round cutter
-6 oz Milk chocolate
-Sugar pearls
-Mini Chocolate eggs
-Edible flowers
-Parchment paper
-disposable gloves (optional)

1.) Roll out the cookie dough to 1/8″ thick and cut out 8 round cookies. Bake and cool

2.) Melt the chocolate and dip the tops of the cookies into the chocolate and shake off the excess. Set on parchment, chocolate side up (I like to wear disposable gloves for this part because its pretty hard not to get all chocolatey)

3.) While the chocolate is still wet, top with three whole chocolate eggs and some crushed pieces (to show that one of the eggs hatched already!). Then add a few edible flower petals and a sprinkle of sugar pearls (ever notice how nests have little bits of debris like feathers and leaves in them? That’s what I’m going for!). Chill the cookies until set

4.) Fill a parchment triangle with melted chocolate and drizzle the edges of each cookie with chocolate. Chill until set. Gently peel off of the parchment paper and use a small knife to trim off any overhanging chocolate.
